  • We use cider made with apples from our own orchards. We ferment and mature it in a tank for a year and then re-ferment in the bottle with some specially selected yeasts. The bottles are stored in our Dovecot which acts as our cellar with its very thick, old stone walls, and left for another year. The result is a fine sparkling cider with a rich mousse - a sort of Prosecco!
