Recipe for our Saxbys Cider Cake
This is a family recipe for a delicious cider cake made (of course) using our very own Saxbys Original cider!
Saxbys Cider Cake
INGREDIENTS
225g self-raising flour
¼ tsp salt
I tsp mixed spice
115g butter cut into small cubes
85g soft brown sugar
2 large eggs beaten
85g raisins soaked in 50ml of Saxbys Original Cider for at least 30 mins
1 large Bramley apple, peeled cored and chopped
Glaze for the cake
120g soft brown sugar
100 ml Saxbys Original Cider
METHOD
Set the oven to 180C
Grease a 2lb (900g) loaf tin
Put the flour, salt and spice into a bowl and rub in the butter with your fingertips until the mixture looks like breadcrumbs
Stir in the sugar, chopped apple and raisins soaked in Saxby's Cider
Add the beaten eggs and stir well
Pour the mixture into the loaf tin and bake for around an hour
Test it is cooked with a skewer. Turn out to cool.
Meanwhile make the glaze. Boil the sugar and Saxby's Cider for a few minutes until it has thickened. Poke holes in the cake and use a pastry brush to brush it all over so the glaze soaks in
