With the dawn of Autumn fast approaching, and the signs of summer becoming a long and distant memory, our hearts and souls will require some accessible warmth and inspiration for the new season’s greetings.

Low and slow recipes, along with delightful meals cooked in slow cookers, roasting trays and casserole dishes can often satisfy the busiest of families. I can thoroughly recommend a decent slow cooker or a very good, large casserole dish or roasting tray to accommodate lots of ingredients to make the most delicious of recipes such as the one recommended below.

Multitasking will easily become attainable and offer the home chef new found freedom in the house whilst the food is bubbling away; ensuring a convenient and delicious mid-week meal for the family.

I just love the depth of taste and texture of a slow-cooked recipe; the hours taken in the slow cooker or in the oven draw out the best from simple British ingredients that eventually grace the plate with an eruption of profound flavour.

This recipe will go a long way and could plate up lots of leftovers for cold snacks and last-minute, quick tummy fillers for later days during the week.

  • Prep Time: 15 min

  • Cook Time: 10 hours

  • Total Time: 10 hr 30 min

Serves: 12 servings

Ingredients

  • 4 medium carrots, each cut into 3 pieces

  • 3 onions, peeled and quartered

  • 2 apples, quartered

  • 2 whole bulbs of garlic

  • 1 bunch of fresh thyme

  • 6kg pork shoulder on the bone, with scored skin (from your local butcher)

  • Olive oil

  • Salt and pepper

  • 500ml Saxby’s Original Cider

  • 500ml chicken stock



Method

  1. Preheat your oven to 220°c. Put the roughly chopped carrots, onions, apples, bulbs of garlic and thyme sprigs into a large roasting tray.

  2. Pat the pork shoulder all over with olive oil and sit it on top of the vegetables. Now massage the salt and pepper into the skin of the pork.

  3. Put the tray on a low shelf in your preheated oven to cook for 30 minutes or until it’s beginning to colour, then turn your oven down to 120°c and leave the pork for 9 hours or until you can pull the meat apart easily with a fork.

  4. At this stage, tip the cider into the roasting tray and let it cook for another hour. Take the pork out of the oven and let it rest for half an hour before transferring it to a large board. Cover the meat with foil and let it rest.

  5. Remove the vegetables and add the chicken stock to the roasting tray. Put it on the heat, and reduce until you have a lovely gravy. Strain before serving.

  6. Serve with your choice's potatoes, green vegetables, and more Saxby’s Cider. Cheers!

For a vegetarian or vegan option just substitute the pork with one large butternut squash, and the chicken stock with vegetable stock, reduce the stock and the cider by half and pre-heat the oven to 200C. 1 bulb of garlic will do, slice the root vegetables into smaller pieces and reduce the total cooking time to between 40 and 45 mins. You may also use any other root vegetable that you find to have a glut of and accompany the carrots as desired. Serve with green vegetables or a simple salad.

Three new Great Taste Awards for Saxby's Cider in 2021

We have won three 2021 Great Taste Awards for Saxby’s Original, Saxby’s Plum and Saxby’s Rhubarb Ciders. Great Taste is the world’s largest and most trusted accreditation scheme – and is designed to support and promote artisan food and drink producers.

What the Judges had to say in 2021:

Saxby’s Original Cider (1-Star)
This cider has a lovely clear colour, a yeasty nose, very well balanced tannin and acidity and a gentle, floral element. A lighter style but very cleverly balanced. Tannins from the cider apples happily provide an uncloying finish. An easy drinker – one to serve well chilled on a summer's day.

Saxby’s Plum Cider (1-Star)
Clean, bright, copper-bronze appearance. Low plum aroma. Juicy plum flesh leads to a drying tannin that helps balance out the sweetness. Plum and apple last pleasantly on the finish. Pleasing coppery-orange tone and clarity. While the nose carries little hint of plum we did find those fruit tannins and touch of fleshiness on the palate. The sweetness is nicely balanced by sound acidity and soft tannins. There's some pleasant plum character here, working decently in tandem with the apple.

Saxby’s Rhubarb Cider (1-Star)
This cider has a very clear colour and a gentle nose. It is very refreshing and sweet. We would happily drink this on a summer afternoon as it is very refreshing. A genuine rhubarb nose and slight baked rhubarb flavour - juicy and with a pleasing fizz.

We are hiring temporary staff for our popular PYO Pumpkin Picking event in October 2021

Help us to host a great family event on our farm this Autumn. We need help with the following roles - greeting our customers, working the pumpkin tills, cider shop, bar and general daily preparation and close-down duties around the site. The events do get busy and you will be expected to be flexible within these roles to cover staff breaks, busy times and generally what needs doing!. This would suit sixth-formers and beyond due to serving alcohol but other duties are available for under 18s. This is an outside event in October so you’ll need sensible footwear and warm clothing. You’ll need to be confident talking to and serving our customers and quick on your feet with maths when on the pumpkin tills.

We are opening a new cider and booze shop at Chester House Estate near Wellingborough and are looking for someone to help run it. If you have experience in retail and sales of alcohol then please get in touch. We are looking for someone who gets on well with people, is organised and has previous experience in this field. It will be a full time position and will involve weekend work. Duties will include providing excellent customer service, till work, organising product displays, stock and deliveries This is an exciting new chapter for us and you will be part of a very small team so flexibility, enthusiasm and energy are essential!

We have triumphed in the 2020 Great Taste Awards with no less than four of our products winning the highly coveted Great Taste Stars. Great Taste is the world’s largest and most trusted accreditation scheme – and is designed to support and promote artisan food and drink producers. This year alone 12,777 products were entered and assessed.


As Cider maker Philip Saxby explains:

“Putting our range of Ciders to the test with a panel of over 500 expert judges is an excellent way for us to get honest, straightforward and impartial feedback from chefs, buyers, food and drink writers and retailers. Saxby’s Original Sparkling Cider (1-star)

Wonderful clear golden straw colour. Complexity on the nose hints at more distinct apple aromas – apple skin, sweet apple, sharp citrus and very slight orange blossom.

Saxby’s Rhubarb Sparkling Cider (1-star)

A light and fruity cider with a punchy rhubarb aroma. The rhubarb is the star here.

Saxby’s Sloe Gin Slider (2-star)

Warm, tawny gold in the glass - a clever and appealing blend of sloes, baked apples with a hint of marzipan.
Saxby’s Christmas Cheer (1-star)

Deep amber gold. Very rich dried fruits and apples on the nose. Rich and raisiny – perfect with a mince pie.
